Bone-Dry Farmhouse Finish • Peppery Saison Spice • The Driest Yeast in the Lineup
SafAle BE-134 is a Belgian saison strain prized for fermenting beers astonishingly dry while layering in the peppery spice and bright fruit of classic farmhouse ale. A diastaticus strain, it consumes sugars ordinary yeasts leave behind, driving saisons to the crackling-dry finish the style was built on.
With a remarkable 90% attenuation and low flocculation, BE-134 produces the lightest body of any yeast we carry, with a rustic, lightly hazy presentation true to the farmhouse tradition.
Cooler fermentations keep BE-134 balanced and softly spicy; as temperatures climb, the pepper and fruit intensify into full farmhouse exuberance. Either way the beer finishes extremely dry, so build malt character in the grist, not the gravity.
SafAle BE-134 is a staple ingredient in many Belgian and farmhouse styles, including:
It is also excellent for brut-style and ultra-dry specialty beers that need maximum attenuation with character.
Pitch one 11.5 g sachet into 5 gallons of standard-gravity wort, fermenting at 64–82°F. Start near 68°F and let the temperature free-rise — the warm finish develops classic saison expressiveness and helps the strain attenuate fully.
Important: as a diastaticus strain, BE-134 will slowly ferment residual sugars, so let gravity stabilize completely before packaging and avoid cross-contaminating equipment used for other beers.
Whether you're crafting a peppery classic saison, a delicate grisette, or any beer that should finish bracingly dry, SafAle BE-134 delivers true farmhouse character with the most thorough fermentation in brewing.
