Root Shoot Malting’s malted blue corn is crafted from a non-GMO Hopi Blue flint corn variety using a careful germination and kilning process to preserve its distinct character. Expect slightly lower extract and friability compared to yellow dent corn, along with a firmer kernel that may require a wider mill gap for optimal crush.
